I have been doing research into some egg free replacements for meals and have re-discoved silken tofu! Now, many long term vegans will already be very familiar with the versatility of silken tofu, but for those who aren’t, and want to try something fun (healthy) and different, there are so many recipes online. It is such a great high protein, low fat and low cholesterol replacement for eggs, perfect to keep you nice and full in winter. Some of the great recipes I found were for:
Brownies (1/4 blended is equivalent of two eggs)
Alfredo Pasta Sauce (makes a guilt free creamy sauce)
Omlette (blend it up with a little potato or corn flour and tumeric, then throw in the pan - add your fave fillings)
WINTER TIP: Porridge a regular thing for you this winter? Half your portion of oats and replace the other half with silken tofu. See how much full you feel in the chiller winter mornings!
This is a really simple dairy and egg free winter desert I made the other night;
Banana Coconut Caramel Pudding
1 banana (chopped)
1 tablespoon caramel syrup
200 ml cococut cream
200 g silken tofu
Half a banana - sliced lengthwise for topping
Add banana and caramel to saucepan, melt down until caramel is thicker and bubbly. Then add the cocounut cream and tofu. Mix very well. Simmer for 5 mins. Then remove from heat, allow to cool. Spoon portions into individual pudding dishes, add sliced banana on top. Chill in fridge for 1 hour. Serve!
