Autumnal Recipes to keep you bouncing

 

Damn, did summer really disappear?

Eek, daylight saving is gone, the afternoons are getting darker and the ugg boots are out of storage.  Getting out to exercise becomes that little bit harder and comfort foods all of a sudden become a fraction more appealing.  Yep, it is Autumn, and it is very autumnal at the moment.  So I have been spending this week (post easter – and mine wasn’t particularly chocolatey this year, I apparently moved onto more mature “treats” and ended up celebrating the sunshine with way too much alcohol).  But if its chocolate, booze, or even hot cross buns that become your undoing, then April is the perfect time to right our “public holiday” wrongs!  So it is time to dig out that blender of yours and try some green smoothies at home.  We have some recipes that will help you snap out of that “autumnal” fog and keep you bouncing.

Greenie a-go-go Smoothie

½ avocado

1 large handful of baby spinach

½ banana

3 stalks kale

Squeeze of half a lime

A few mint leaves

300ml coconut water (organic)

BLEND together and enjoy!

 

Cauliflower and mushroom soup

500g cauliflower

500g mushrooms

2 large zucchinis

3 stalks celery

3 cloves garlic

1 large onion

3 large table spoons chia oil

3 Sassel vegetable stock cubes

Pink Himalayan salt

Dried rosemary

Firstly, chop the cauliflower, zucchini and mushrooms throw them in a roasting dish, cover in chia oil, dried rosemary and pink Himalayan salt.  Roast at about 150 degrees for about 40 mins.

Then heat some oil in a pot, add chopped onions, garlic and celery.  When onion is clear, add stock and roast vegetables and simmer for another 20 mins.  Then enjoy!
